Simply Steamed Mussels

Ingredients
  

  • 2 tbsp butter
  • 4-6 cloves garlic sliced
  • 1/4 tsp red pepper flakes
  • 2 tbsp olive oil
  • 2-3 lbs. mussels cleaned
  • 1 cup water
  • salt & pepper
  • 2 tbsp chopped fresh parsley

Instructions
 

  • Sauté garlic in butter for 2 minutes.
  • Add red pepper, olive oil, and water.
  • Bring to simmer.
  • Season with salt and pepper.
  • Stir in parsley.
  • Add mussels and cook, covered, 4-6 minutes untilmussels open, shaking pot occasionally.
  • Discard any that do not open.
  • Serve with crusty bread.
