Monkfish Scaloppini

Ingredients
  

  • 1 lb monkfish, sliced on diagonal thin for scaloppini
  • 2 tbsp butter
  • 2 tbsp vegetable oil
  • 1/2 cup finely chopped shallots
  • salt & white pepper
  • 3/4 cup chicken broth
  • 1 tbsp fresh lemon juice
  • 1/4 tsp thyme

Instructions
 

  • Dust monkfish with flour.
  • In melted butter and oil, sauté fish for 1½ minutes on each side.
  • Set aside on plate and cover.
  • Sauté shallots in same pan until soft.
  • Add stock, lemon juice and thyme.
  • Cook on high 2 minutes until reduced.
  • Season with salt and pepper.
  • Spoon overfish and serve.
